Best ever banana muffins!
- 1 stick butter at room temperature
- 2 eggs
- 1/2 cup sugar
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup ripe mashed bananas
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Preheat oven to 350 degrees. Spray muffin tins with non stick spray.
In an electric mixer, add butter and sugar. Then add eggs and beat well.
Mix dry ingredients in a medium sized bowl. Then add to the butter mixture. Last, add the bananas, sour cream, and vanilla. Stir well then pour into muffin tins.
Bake for about 13 minutes.
Yield: 2 dozen mini muffins & 16 regular size muffins
*Recipe inspired by The Martha Stewart Cookbook. Banana Bread. My modifications are: to use muffin tins, add chocolate chips and reduce the sugar in half (original recipe calls for 1 cup of sugar).
